Every spring, Mediamatic organises a season around Japanese knotweed. Knotweed is a fast-growing plant known in Europe for being considered invasive. What many do not know, however, is that this plant species has a host of positive properties. During this season we will explore how to live in harmony with this controversial plant.

Hiroki Yasuda

Hiroki Yasuda’s passion for the culinary arts took root in his hometown of Nagoya, Japan, where he was both born and raised. From an early age, Hiroki was captivated by the art of crafting and enjoying exquisite dishes, a passion that would shape his entire career.

Determined to fulfill his childhood ambition of becoming a chef and owning a restaurant, Hiroki pursued a formal culinary education. He honed his skills and expanded his culinary knowledge in Tokyo. It was during a trip abroad that Hiroki noticed a significant lack of authentic Japanese cuisine, a realization that ignited his ambition to introduce the true flavors of Japanese gastronomy to a global audience.

While managing his own restaurant back in Japan, Hiroki deepened his expertise in a range of specialties, from seafood and sake to sushi and ramen, working in some of the country's most prestigious dining establishments. His culinary journey eventually brought him to Spain and later to the Netherlands, where he now owns a restaurant. Here, Hiroki continues to share the rich, authentic flavors of Japanese cuisine with an appreciative international clientele, contributing to the global appreciation of Japan’s culinary heritage.
